The rarity of this tea lies in how it is grown. The leaves themselves are bitten by green leaf-hoppers while still growing, this causes a reaction in the leaves to release additional polyphenols, tannins, and aromatic compounds that act as a defence mechanism. The result is a pleasurable honey-like flavour. Young leaves and tips are used and heavily oxidized to achieve the slightly baked and woody flavour. A great cup for connoisseurs and those new fine teas.

Brewing & Ingredients

1-2 teaspoons per 250mls water, 
Brew at 80-85c for around 1-2 minutes
