China’s famous Silver Needle White Tea (also known as Baihao Yinzhen) is widely regarded as the finest white tea in the world. It’s made from the unopened, young silver tea buds of camellia sinensis (rather than the leaves or stems) and is only harvested for two days each year during early spring. The Chinese call this the ‘Imperial Harvest’. Silver Needle tea has a very distinctive aroma, like freshly cut hay. It’s mellow, sweet and delicate, similar to white peony tea, with a pale yellow liquor that glitters in the sunlight. Tricky to find, but worth every penny.

My favourite tea! This is an elegant tea with a fresh delicate taste. The aroma immediately takes you to spring and summer - you're tasting the first leaves of the spring season after all. I get several steeps from Silver Needle. The first and second steep I like to be gentle with the new buds. I steep around 80c degrees, this gently releases the sweet flavours. The third steep I increase the temperature to about 90c degrees and I'm hit with another round of taste explosions, for a pure tea it really does pack in some flavours. I pick the time and place for Silver Needle, usually shared with friends in clear glass tea cups to really experience the colour and taste. It's ALWAYS a talking point at my tea sessions.
