Steep for 5-7 minutes for a balanced flavour, or up to 10 minutes for a stronger, more tart infusion. Strain and enjoy hot.

For iced tea: Brew hot first using 3-4 tablespoons per litre of boiling water, steep 7-10 minutes until deep crimson, strain while hot, cool to room temperature, then refrigerate. Serve over ice - keeps well for up to 3 days.
